Tóm tắt	This document is intended to provide guidance in producing and handling coffee for human consumption to prevent and reduce Ochratoxin A (OTA) contamination in coffee. All coffee beans should be prepared and handled in accordance with the Codex General Principles of Food Hygiene (CAC/RCP 1-1969, Rev. 4, 2003), which are relevant for all foods being prepared for human consumption. This Code of Practice indicates the measures that should be implemented by all persons that have the responsibility for assuring that food is safe and suitable for human consumption.
