Health Canada's Food Directorate completed a premarket safety assessment of a food additive submission seeking authorization for the use of chitosan from white button mushrooms (Agaricus bisporus) as a preservative in numerous foods. Chitosan is a new food additive in Canada. The results of the premarket assessment support the safety and efficacy of chitosan from white button mushrooms (A. bisporus) as a preservative in numerous foods. Consequently, Health Canada is authorizing the use of chitosan from A. bisporus as described in the information document by modifying the List of Permitted Preservatives, effective 30 May 2024. The purpose of this communication is to publicly announce the Department's decision in this regard and to provide the appropriate contact information for those wishing to submit an inquiry or new scientific information relevant to the safety of this food additive.
